I honestly had never really made any sort of meringue before. But I knew in theory how to make it. Admittedly, my first attempt didn’t go so well when one of my egg’s yolks broke into the egg whites. I thought I had scooped it all out but I could never get the whites to fluff up past very soft peaks. So I had to scrap it and start again. It’s also possible that I added too much sugar too fast, which will also result in the whites not stiffening. But I had seen a recipe online about chocolate chip meringue cookies, and I decided to put my own spin on it. 

Since I initially made these around the holiday season I wanted a holiday flavor for these chocolate chip meringues. I initially thought peppermint would be great but discovered I had no peppermint extract in my cabinet. It still would be a wonderful flavor and I invite you to try making these replacing the orange extract that I DID find in my cabinet with peppermint extract.

These are sometimes called “Forgotten Cookies” since you preheat the oven, then turn it off as soon as you put them in. Then you just leave them overnight. Crispy on the outside and soft and springy on the inside, these Orange Chocolate Chip Meringues have a light flavor with plenty of sweet satisfaction.

  • 1 Mixing Bowl
  • Hand Mixer

  • 4-5 whole Egg whites I had smaller eggs, so I added the 5th portion of egg whites.
  • 1/2 tsp white vinegar A substitution for the cream of tartar.
  • 1 tsp vanilla extract
  • 1 tsp orange extract
  • 1 Cup White Sugar
  • 1 Cup Chocolate Chips


  • 1. Preheat oven to 350 degrees
  • 2. Add egg whites, extracts and white vinegar to the bowl.

  • 3. Mix on medium speed until soft peaks form. Usually around 3 minutes.

  • 4. SLOWLY (like 1 TBSP at a time) add the sugar to the egg white mixture and mixing on high speed.

  • 5. Mix on high speed until it forms stiff peaks.

  • 6. Gently fold in the chocolate chips with a spatula.

  • 7. Line tray with parchment paper. Scoop (or pipe) cookies onto the sheet. You can place them fairly close together as they should not fall or expand while cooking.

  • 8. Place the tray in the oven and immediately turn the oven off. Leave them in the oven overnight.

  • 9. They are ready to eat the next day!
