Watermelon Mojito Slush Drinks

I needed a refreshing summer drink and my favorite cocktail is the Cuban Mojito. There is nothing more refreshing than mint and lime mixed and chilled. However, my kids wanted a fun drink too. We still had half a watermelon to cut up and so I decided to use half of that half (one-quarter of the total melon) to make these delicious and refreshing summer Watermelon Mojito Slush drinks. They’re a little too liquidy for a smoothie, but the watermelon blends down into more of a perfect slush texture.

Any mint can be used, I just happened to pick up a sweet mint plant this year. Be aware that mint is pretty much a weed, so if you plant it in the ground it can quickly take over everything. I keep mine potted on my kitchen window sill where it gets watered regularly and the morning sun. If you also have fresh limes, all the better! Squeeze enough to get you that quarter cup for a balanced flavor in the drink. Overall, this made enough to fill 2 very large cups and 1 smaller cup, so I averaged it out to about 3 drinks.

For One and All – Alcohol-Free Version

This is the quick and easy Watermelon Mojito Slush. Simply prepare and toss the ingredients in the blender, chill for a bit and you’re good to go! The whole family loved this and even took them out to the backyard to sip on in between splashing in the pool.

Watermelon Mojito Slush (Virgin)

No-alcohol version.

Ingredients

  • 1/4 Whole Seedless Watermelon
  • 1/4 Cup Lime Juice
  • 15 Leaves Fresh Sweet Mint

Instructions

  • 1. Slice watermelon fruit from rind and cube. Drop into the blender. Should end up around the 1-liter line. Pulse until watermelon is essentially a slush.

  • 2. Add 1/4 cup lime juice to the blender.

  • 3. Pluck or trim around 15 leaves of fresh sweet mint from the plant. Rinse and add to the blender.

  • 4. Mix well in the blender.

  • 5. Chill in the fridge for at least 10 minutes.

  • 6. Serve and garnish with a watermelon slice (optional.)

Notes

The alcohol-free version is quick and easy to size up for larger crowds. A perfectly refreshing drink for the hot summer BBQ.

Adults Only – Alcoholic Version

We step it up a level with this alcoholic version. You don’t absolutely have to muddle the sugar and mint, but I highly recommend it for the best flavor. Muddling really releases the mint aroma and flavor and the sugar helps to tear apart the leaves a bit more. Plus the extra sugar helps balance out the bite of the rum. This may end up making slightly larger servings with the extra rum added.

Ingredients

  • 1/4 Whole Seedless Watermelon
  • 1/4 Cup Lime Juice
  • 15 Leaves Fresh Sweet Mint
  • 3-6 Shots White Rum This depends on how strong you want it.
  • 3 Tbsp Sugar

Instructions

  • 1. Slice watermelon fruit from rind and cube. Drop into the blender. Should end up around the 1-liter line. Pulse until watermelon is essentially a slush.

  • 2. Add 1/4 cup lime juice and shots of rum to the blender.

  • 3. Pluck or trim around 15 leaves of fresh sweet mint leaves and place in the muddler with the sugar. Muddle well, working the sugar into the leaves. Drop the whole muddles mixture until the blender.

Notes

Obviously, the amount of alcohol can be adjusted to your desired strength. Just keep in mind the more you add, the less "slushy" the drink will be.
